Making Rice Croquettes with Adelina Recipe follows in English & Italian from my 2nd book "Recipes from my Italian Table" Rice Croquette 500g cooked rice (2 1/2 Cups), I use Arborio, 3 – 4 eggs, 100g grated Parmesan cheese, salt and pepper to taste, one tablespoon chopped parsley. Put the rice in a stainless steel bowl, then add the cheese, parsley, salt & pepper and mix with your hands, then add one egg at a time, I use free range eggs and I don’t always use 4 eggs, the mixture should be smooth
